are emails legally binding?

I am a project manager and hired a replacement to become assitant manager and to take over my place as project manager within 6 months. Company is now closing that facility and told my project manager she was not getting Project Manager serverence because I as original project manager did not put her position in writing, although I did email her the specifics of the job and assured her that she woudl be project manager within six months.
